Gluten/Dairy Free Chocolate Chip & Ricie Cookies


I'm always trying to convert recipes for Grace so that she can have yummy treats — there is so much that she can't have and I feel so sorry for her sometimes! I adapted these from a great cookbook called Kitchen for Kids by Jennifer Low. The recipes are really easy and interesting so great for when you have a spare 1/2 an hour to make something delicious! These seriously took me no longer than 20 minutes — instant gratification for a pre-schooler, haha

These cookies are meant to be made with Butterscotch chips, but being that Butterscotch has way too much sugar for kids, I substituted it for dark compound chocolate chips which the recipe suggested.

I buy the Pams dark compound chocolate chips as they are totally dairy free, with no skim milk powder — none of the others I have found are dairy free so if you find some, grab 'em!

Ingredients:
1/3 cup Rice Flour
1/4tsp baking powder
sprinkle of salt
1/4 cup brown sugar
2T Olivani or other dairy free butter substitute spread
1 egg yolk
1/3 cup puffed rice cereal (I used Freedom Foods gluten free rice puffs)
2T dark compound chocolate chips

Method:
  1. pre-heat the oven to 180°c
  2. put the butter and sugar into a bowl and cream together with a spoon, add the egg and mix really well.
  3. Sift the dry ingredients into the mixture (flour, salt, baking powder) making sure it's mixed well.
  4. Add the chocolate chips and rice puffs, mixing gently.
  5. With a spoon, drop the mixture onto a lined baking sheet — will make about 12 cookies.
  6. Bake for 12 to 14 minutes or until the cookies are golden brown (or not shiny). Allow to cool completely on the cookie sheet.

I've just recently been told I can't eat gluten, which I'm still getting my head around. It must be really hard for kids, I really feel for them, because at least I've been able to eat whatever I like until now. Fortunately now there are lots more gluten (and dairy) free things available, so it's easier than it was.

It has been really hard, but then it's also been like that since she was born so I haven't known any different with feeding Grace — the dairy is the hardest! Cheese and things like that are so difficult to replicate with soy or another substitute. Still, like you said, there are loads of things available now so it does make it easier.

I'll post more gluten/dairy free recipes in the future so keep checking back =)

Thank you! I am always on the lookout for new GF recipes to try. I have been baking GF goodies since my Ruby was diagnosed with coeliac disease 7 years ago. It's the only thing I know now.
